Easy, crunchy stir fried vegetables in oyster sauce

Ingredients

 

1-2 celery sticks 

1/2 a green, yellow and red pepper 

1 carrot 

5-6 beans

1 onion 

1-2 pips garlic 

1 inch ginger 

1-2 fresh red chillies

1-2 tsp dark soy sauce 

1-2 tbs oyster sauce 

1-2 tbs tomato ketchup

 

Method

 

String the celery sticks and cut into thin slices at an angle

Slice the peppers and cut them into slices slightly thicker than the celery

Slice the carrot thinly

Slice the beans at an angle

Cut the onion into rings

Slice the garlic thinly Slice the ginger thinly

Slice the chillies thinly (remove seeds if you want it mild)

 

Heat the oil in the wok

When hot add the chillies, garlic and ginger

Cook for about 3-4 minutes

Now add the vegetables, starting with the one that needs longer cooking, here the carrots stir for 2-3 minutes

Add the beans next and stir for a couple of minutes

Now put in the celery slices and stir for a couple of minutes

Add in the peppers and onions now stir for 2-3 minutes

Add the soy sauce, oyster sauce and tomato ketchup and continue to stir for 2-3 minutes

Remove while the vegetables are still crunchy 

Enjoy with cooked rice or as a side dish with noodles
