Rogan Josh - lamb

Ingredients

 

Bit of ghee/unsalted butter

1 lb cubed lamb

1 tsp cumin powder

1 tsp coriander powder

1/2 tsp turmeric powder

1 - 2 tsp chilli powder

1 tsp garam masala

2-3 pips garlic - pound

1/2 inch of root ginger - pound

1 medium onion - sliced

1 can of chopped tomatoes

2-3 tbs tomato puree

2 tbs water

3-4 tbs double cream

Some chopped fresh coriander leaves

Some salt

 

Method

 

Melt the ghee/butter in a wok/pan

Put in the lamb pieces and cook until meat is sealed

Remove meat and put in a bowl

Reduce heat, and fry the cumin, coriander, turmeric, chilli, garlic and ginger

When fragrant, add in the sealed meat and cook for a few minutes

Now add the sliced onions and continue to cook for a further 5 minutes

Add the tomatoes and puree now, lower flame and let it cook for about an hour

Now add in the double cream and cook for a further 5 minutes

Add in the garam masala, remove from heat and stir in the coriander leaves

Put in a bit of salt
