Onion Bhajis / Bahjis / Bajis /Ingredients 150 grms/6oz gram flour 1/2 tsp bicarbonate of soda 1 tbsp ground rice 1 tbsp ground cumin 1 tbsp ground coriander 2-3 stalks fresh coriander, chopped 2-3 tsp chilli powder salt to taste 2-3 fresh green chillies, thinly sliced 2 onions sliced thinly water cooking oil for frying
Method
In a large bowl, mix gram flour, bicarbonate of soda, ground rice, cumin, coriander, chilli powder, salt, green chilli and sliced onions Add water a little at a time until you get a soft batter and the sliced onions are well coated Heat oil in a wok. Put in small amounts of batter at a time Cook until brown and remove Serve with chutneys or dips
You can make potato or sweet potato bhajis using the same recipe. Replace the onions with thinly sliced potatoes |
