nasi minyak / ghee rice

Ingredients

1/2 cup of uncooked white rice

Bit of ghee/unsalted butter

1 onion, sliced thinly

1-2 pips garlic, peeled and crushed

5 whole cloves

3-4 green cardamoms, split at the top

1-2 small cinnamon sticks

5 whole peppercorns, black or mixed

pinch of turmeric

pinch of salt

2-3 tbspn of seedless sultanas

2-3 tbspn of flaked almonds

2-3 tbspn of broken cashew nuts

Method

Wash the rice well

Water - boil a little less than double the amount of rice

Melt ghee/unsalted butter in a sauce pan

When hot, add the onions, cook till it is turning brown

Add in the garlic, cloves, cardamoms, cinnamon sticks peppercorns and turmeric powder

Keep stirring until fragrant

Now add the rice, water and pinch of salt

When it starts to boil, stir well, cover the pan, lower flame and let it cook

Remove from the stove when it is cooked, about 15 - 20 minutes

In a wok, melt some ghee/ unsalted butter

When hot add the seedless sultanas

Fry them till they change colour and puff

Remove from the wok

Now fry the flaked almonds gently and remove when turning brown

Next fry the broken cashew nuts and remove when they turn brown

Gently mix in the sultanas, almonds and cashew into the nasi minyak before serving
