Curried VegetablesIngredients 2 carrots 2 potatoes 5-6 runner/dwarf or french beans Small can of tomatoes or 2 tomatoes Some chopped coriander leaves for garnish 1 onion, slice thinly 1/2 inch root ginger, slice thinly 1-2 fresh green chillies Pinch of turmeric Pinch of cumin Pinch of paprika Pinch of coriander Pinch of garam masala salt Some oil
Method Cut the carrots, beans and potatoes into slices according to individual taste Cut the tomatoes into quarters if using fresh ones Slice the onion thinly Slice the ginger thinly Chop the fresh green chillies, remove seeds if you want it mild Chop some coriander leaves
Heat the oil in a pan/wok When hot put in the onions and cook till brown Now add the ginger and chillies When fragrant lower heat and add turmeric, cumin, paprika, and coriander powder Stir for a few minutes then add the tomatoes Cook for 2-3 minutes, add the carrots, potatoes and beans Continue to cook over a low flame until the vegetables are done Put in the salt, garam masala and chopped coriander leaves Mix well and serve |
