Beef, lamb or chicken masala

 

Ingredients

 

1/2 lb (500g) of lamb or beef or chicken

Some unsalted butter

2-3 pips of garlic (pound)

3/4 inch of root ginger (pound)

3-4 green cardamoms (split open tops)

A pinch of turmeric powder

1 tbsp coriander powder

1/2 a tub (75g) of thick, natural yogurt

3-4 tbsp of water

1-2 tbsp almond powder

3-4 green chillies

1 medium sized onion (sliced thinly)

1 tsp garam masala

1 pinch salt

Some chopped fresh coriander leaves

 

Method

Melt butter in pan when hot, add ginger, garlic and cardamoms.

When fragrant, add turmeric and coriander powder.

Stir for a couple of minutes then add in the meat and cook till meat is sealed.

 Mix the yogurt with water and add to the meat (not too much liquid).

When this starts to boil, add the almond powder and fresh green chillies.

In another frying pan, melt some butter when hot, fry the onions until they begin to turn brown. Add these into the sauce and lower the flame. When the meat is tender, add in the garam masala and salt. Stir and remove from the stove sprinkle chopped, fresh coriander before serving.
